- Mushrooms (sliced)
- Baby spinach
- 1 garlic clove (minced)
- Thyme
- Salt & pepper
Instructions
1. Cook polenta according to package and/or make your own.
2. Meanwhile, heat deep saucepan over medium heat. Once hot, add oil. Then add mushrooms, cook until they are lightly brown & moisture has evaporated. Add garlic, fresh thyme, salt & pepper to taste.
3. Sauté spinach. Can use same pan if you prefer.
4. Once everything is cooked, assemble polenta rounds by topping with spinach and mushrooms (or your preferred veggies).
