Cranberry Orange Chia Pudding (Easy Make-Ahead Breakfast)


Description

A bright, citrusy chia pudding made with cranberry, orange zest, and cozy spices. Naturally sweetened, dairy-free, and perfect for an easy make-ahead breakfast or snack.


Ingredients

  • 2 cups dairy free milk (or milk of choice)
  • 1/2 cup cranberry juice (optional)
  • 1/2 cup chia seeds
  • 2-3 tbsp maple syrup or agave
  • 2-3 tbsp fresh orange juice
  • Zest of orange (about 1 tsp)
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon or cardamom
  • Pinch of salt
  • 1/4 - 1/3 cup dried cranberries

Instructions

  1. Add milk, juices, maple syrup, vanilla, orange zest, spices, and salt to jar or bowl. Whisk together. Then add in chia seeds and stir. Add in dried cranberries (optional).
  2. Let sit for 5 minutes and stir again. The chill in fridge overnight.
  3. When ready to serve top with granola, dried cranberries, honey, or preferred toppings.
