This Easy Apple Crisp (Vegan & Gluten Free) recipe is cozy, easy to make, and comes together with simple ingredients you probably already have in your pantry.

For the apple filling:
- 4-5 medium size apples (peeled & cored. Can slice or cut into chunks)
- 1 Tbsp lemon juice
- Zest of half a lemon
- 1 1/2 Tbsp maple syrup
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla
- 1/4 tsp pumpkin spice
- 1 Tbsp arrowroot flour or cornstarch
- Pinch of salt
- 1/3 cup + 2 tbsp gluten-free flour or regular flour
- 1/3 cup + 2 tbsp rolled oats
- 1/4 cup coconut sugar (can add 1-2 Tbsp more if you want it sweeter)
- 1/4 cup olive oil
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/4 tsp pumpkin spice
- 1/4 tsp salt
Instructions
- Preheat the oven to 375°F. Lightly grease an 8×8 baking pan.
- Make the crisp topping: In a medium bowl, add in all crisp topping ingredients. Mix well, the mixture will look crumbly (do not mix until smooth).
- Make the apple filling: In a large bowl, add in all the apple filling ingredients. Stir together to coat the apples evenly.
- Pour the apple filling into the prepared baking pan. Sprinkle the crisp topping evenly over the top of the apples until it’s covered.
- Bake for 35-40 minutes or until the topping is golden brown and the apples are soft and tender.
- Remove from the oven and let cool for 15 minutes before serving. Serve topped with vanilla ice cream or enjoy on its own.
