Description

This Easy Mixed Berry Crisp is made with a juicy berries and topped with a golden oat-almond crisp that gets beautifully crunchy in the oven. It’s free of refined sugar, dairy, egg, soy, and gluten, but you’d never know it from the flavor.


Ingredients

Crumble topping ingredients:
  • 1/3 cup gluten-free flour (I use Bob's Red Mill 1:1) or regular flour
  • 1/3 cup + 2 tbsp rolled oats
  • 1/4 cup coconut sugar (can add 1-2 tbsp more if you want it sweeter)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup olive oil (or coconut oil)
Berry base ingredients:
  • 5-6 cups fruit (I used frozen mixed berries)
  • 1 tbsp lemon juice
  • zest of 1/2 lemon
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1 tbsp arrowroot flour or cornstarch

Instructions

  1. Preheat oven to 375°F.
  2. Make crumble topping: add all crumble topping ingredients to a medium bowl and stir together.
  3. Make berry base: add all berry base ingredients to a large bowl. Stir together to coat the berries.
  4. Add the berry mix to an 8 x 8 pan and sprinkle the crumble topping on top, distributing evenly.
  5. Place in oven and bake 35-40 minutes or until the topping is golden and there’s some bubbling on the sides.
  6. Can serve this warm or cold. It’s great on its own but can be served with ice cream and/or whipped cream.
