These pumpkin oatmeal bars are vegan, gluten free, perfectly spiced and everything nice!

Wet Ingredients:
- 1/2 cup 100% pumpkin puree
- 2 Tbsp olive oil
- 3 Tbsp coconut sugar
- 3 Tbsp maple syrup
- 1 flax egg
- 1 tsp vanilla extract
Dry Ingredients:
- 1/2 cup + 2 tbsp gluten-free flour
- 1 1/4 cup gluten-free rolled oats
- 1/4 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp pumpkin pie spice
- 1 1/2 tsp ground cinnamon
- 1/8 tsp salt
Add-Ins:
- 1/4 cup chocolate chips (I use vegan)
- 2 Tbsp pumpkin seeds (pepitas)
- 2 Tbsp dried cranberries (chopped)
Optional Toppings:
- 1/2 Tbsp chocolate chips (chopped)
- 1 Tbsp pumpkin seeds
- 1/2 Tbsp dried cranberries (chopped)
Instructions
- Preheat oven to 350 degrees Fahrenheit. Line an 8 inch square pan with parchment paper. Set aside.
- In a large bowl, add all the wet ingredients (pumpkin puree, olive oil, coconut sugar, maple syrup, flax egg, & vanilla). Whisk until incorporated.
- Next, add-in all the dry ingredients (flour, oats, baking powder, baking soda, pumpkin pie spice, cinnamon, & salt). Whisk together until incorporated and no flour patches. Fold in add-ins.
- Pour batter into prepared pan. Use a rubber spatula to smooth into an even layer. Press toppings into batter (optional).
- Bake for 24-30 minutes, until edges have browned.
- Allow to cool in pan on cooling rack for about 1 hour. Then, remove from pan and transfer onto a cooling rack to finish cooling completely. Allow to cool completely before storing.
Notes
- For room temperature storage – store in airtight container for up to 1 week.
- For freezer storage – store in a sealed freezer bag or airtight container for up to 1 month. Before enjoying, allow to thaw for 10-15 minutes or heat in microwave in 10 second increments until warm.
