It’s finally fall, which means we’re baking up all things pumpkin! These Easy One Bowl Vegan and Gluten-Free Pumpkin Oatmeal Bars are my absolute FAVORITE breakfast bars!! They are vegan, gluten free, perfectly spiced and everything nice, which makes them a perfect oatmeal bar for fall!

These healthy pumpkin oatmeal bars are super moist and so delicious. They are packed with fall flavors and studded with chocolate chips, pumpkin seeds, and dried cranberries. However, you can easily customize them to include your favorite add-ins. They come together quick and make for a tasty fall flavored healthy breakfast, snack, or even dessert option!

How to make easy one bowl vegan and gluten-free pumpkin oatmeal bars

  1. Preheat oven.

    Preheat oven to 350 degrees Fahrenheit. Line an 8-inch square pan with parchment paper and set aside.

  2. Add wet ingredients.

    In a large bowl, add in pumpkin puree, olive oil, maple syrup, coconut sugar, flax egg, and vanilla. Whisk until incorporated.bowl of wet ingredients for pumpkin oatmeal bars

  3. Add-in dry ingredients.

    Add-in flour, oats, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt. Whisk until incorporated.bowl of dry ingredients for pumpkin oatmeal bars

  4. Fold in the add-ins.

  5. Pour batter into pan.

  6. Bake.

  7. Allow to cool.

    Cool in pan on cooling rack for about 1 hour. Then, remove from pan and transfer onto cooling rack to finish cooling completely.

  • 1/2 cup 100% pumpkin puree
  • 2 Tbsp olive oil
  • 3 Tbsp coconut sugar
  • 3 Tbsp maple syrup
  • 1 flax egg
  • 1 tsp vanilla extract

Dry Ingredients:

  • 1/2 cup + 2 tbsp gluten-free flour
  • 1 1/4 cup gluten-free rolled oats
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1 1/2 tsp ground cinnamon
  • 1/8 tsp salt

Add-Ins:

  • 1/4 cup chocolate chips (I use vegan)
  • 2 Tbsp pumpkin seeds (pepitas)
  • 2 Tbsp dried cranberries (chopped)

Optional Toppings:

  • 1/2 Tbsp chocolate chips (chopped)
  • 1 Tbsp pumpkin seeds
  • 1/2 Tbsp dried cranberries (chopped)

Instructions
