A light, seasonal salad with peppery arugula, sweet pears, crunchy nuts, and a tangy pomegranate vinaigrette. Fresh, balanced, and perfect for holiday meals or everyday lunches.

For the salad:
- 5 oz bag (approx 4 cups) arugula
- 2 pears, sliced
- 1/2 of a large shallot minced
- 1/2 cup chopped walnuts & pecans
- About 1/4 - 1/3 cup dried cranberries
- Pomegranate seeds for sprinkling on top
- Feta or goat cheese for topping (optional)
- Protein of choice (optional)
- 3 tbsp olive oil
- 1 1/2 tbsp pomegranate vinegar
- 2 tbsp pomegranate juice (optional)
- 1 tbsp honey or agave (optional, for sweeter)
- 1 tsp Dijon mustard
- 1/4 tsp salt
- Ground black pepper to taste
Instructions
- Make the vinaigrette: in a small bowl, whisk together the vinegar, juice (if using), honey or agave, Dijon mustard, salt & pepper. Then, drizzle in the olive oil and continue whisking until well combined. Taste and adjust ingredients to your preference.
- Assemble the salad: in a large bowl, add arugula, pears, shallot, chopped nuts, dried cranberries, and pomegranate seeds. Gently toss with the vinaigrette. Top with cheese and protein if preferred.
- Notes: the amount of salad ingredients can be adjusted to more or less based on your preference.
