Raspberry Ricotta Toast with Honey and Pistachios

Ingredients

  • sourdough bread, sliced or your favorite bread (use GF bread to make it gluten free)
  • olive oil (for brushing on bread)
  • raspberries
  • ricotta cheese or vegan cheese
  • 1 tbsp white balsamic vinegar
  • 1 1/2 tbsp honey or agave (can do more for sweeter)
  • pistachios, chopped

Instructions

  1. Slice bread and brush with some oil and toast until lightly golden.
  2. In a small bowl, add white balsamic vinegar and honey, whisk together.
  3. Spread cheese on top of toast. Top with fresh raspberries, sprinkle chopped pistachios, and drizzle the honey mixture over the top.
