These Peach Crisp Overnight Oats taste like dessert but are secretly packed with feel-good ingredients that will keep you energized all morning.

- 2/3 cup almond milk (or your fave milk)
- 1/2 cup rolled oats
- 1 tbsp almond butter (optional)
- 1 tbsp maple syrup (can add more if you want it sweeter)
- 1/2 tsp vanilla
- 1/4 tsp cinnamon
- pinch of salt
- 1 tsp chia seeds
- granola (for topping)
- peaches (for roasting)
Instructions
- Roast the peaches: Preheat oven to 400°F & line baking sheet with foil. Slices peaches, drizzle with oil, add cinnamon and or sugar (optional). Bake for about 20 minutes or until fruit is tender.
- Make overnight oats: in a jar, add milk, maple syrup, vanilla, almond butter, & chia seeds. Stir to combine. Then add in oats, cinnamon, and salt. Stir together and make sure oats are fully submerged. Cover with lid and place in fridge overnight.
- When ready to serve, top overnight oats with roasted peaches and granola.

Note: this recipe makes enough for 1 jar, double this recipe for larger portions.
