It’s almost Halloween and we are making Monster Peanut Butter Cups. These easy no bake healthier peanut butter cups are perfect when you need a quick and delicious treat. They are a spooky twist on a classic treat! Made with rich chocolate and creamy peanut butter with a surprise jam filling. No baking needed for these treats, just chill, fill, and thrill!
The best thing about these healthier peanut butter cups is that they are low sugar, gluten free, vegan, and taste AMAZING!! Even my family, who regularly buy store bought peanut butter cups prefer these!
The Monster Peanut Butter Cups are super how versatile. They can be made using vegan or regular chocolate and you can add any nut butter filling you like. I love to use almond butter with these and the jam filling adds some fruity sweetness. Topping them off with the candy eyes makes them extra spooky!

Description
These Monster Peanut Butter Cups are a spooky twist on a classic treat! They’re made with rich chocolate and creamy peanut butter with a surprise jam filling. No baking needed for these treats, just chill, fill, and thrill!
Ingredients
- 1 cup chocolate chips (or vegan chocolate)
- 3/4–1 cup creamy natural peanut butter (or nut butter of choice, I use almond butter)
- 1 tbsp maple syrup
- 1 tbsp coconut flour
- Fruit jam (optional filling)
- Edible candy eyes (optional topping)
Instructions
- Line muffin pan with cupcake liners. This recipe makes about 9.
- Add half of chocolate chips to bowl and microwave in 30 second increments until chocolate is melted, stirring each time. (You can also used a double boiler to melt chocolate instead).
- Add about 1 tbsp of melted chocolate to bottom of each cup. Use a spoon to spread chocolate up the sides of liner. Once all are filled place in freezer for a few minutes to set.
- Next make the peanut butter filling. In a bowl, add peanut butter, maple syrup, and coconut flour. Stir until combined.
- Then add 1/2 – 1 tbsp peanut butter filling to each chocolate cup (use more or less depending how tall you want the filling). Place back in freezer for a few minutes to set.
- Then add about 1 tsp or more of jam filling, if using, to each cup. Place back in freezer for a few minutes to set.
- Melt the other half of the chocolate. Add about 1 tbsp of chocolate to the top of each cup, covering all of the filling. Press candy eyes on top, if using. Place back in freezer for few minutes or until chocolate is solid.

- These can easily be made in a mini muffin tin by cutting the recipe in half
