Ingredients

For the slaw:
  • 4 cups shredded cabbage (mix of red and green)
  • 2/3 cup grated carrots
  • 1 red bell pepper (cut into thin strips)
  • 3 radishes (thinly sliced)
  • 1 green onion (chopped)
  • 1/2 cup sliced almonds
  • 1/3 cup fresh parsley (chopped)
  • 1/4 cup fresh dill (chopped)
  • Salt to taste
For the dressing:
  • 1/3 cup olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp O’s Citrus Champagne Vinegar
  • 1 garlic clove (grated)
  • Salt & pepper to taste

Instructions

  1. Make the vinaigrette: in a small bowl, add all the vinaigrette ingredients together. Whisk together.
  2. Make the slaw: in a large bowl, add in all the slaw ingredients together. Toss to combine.
  3. Pour about 1/4 cup of vinaigrette over slaw and toss to combine. Then, add in the rest of the vinaigrette. Stir together.
  4. Serve or cover and let sit in fridge for about an hour to let the flavors soak into the cabbage.
