This easy soup is made in one pot and ready in 30 minutes. It’s hearty and comforting, full of herbs, veggies, and cannellini beans. It’s naturally vegan and GF, but so delicious and flavorful!


Ingredients

Units Scale
  • 1/4 cup olive oil
  • 2 shallots + 1/2 cup yellow onion (chopped)
  • 4 cloves garlic (minced)
  • 3 medium carrots (chopped)
  • 3 stalks celery (diced)
  • 1 tbsp tomato paste
  • 2 15 oz cans of cannellini beans
  • 4 cups vegetable broth
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp dried oregano
  • 1 1/4 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 4 oz kale or baby spinach

Instructions

1. In large pot, heat olive oil over medium-high heat.
2. Sauté onion, shallots, & garlic for 3 minutes. Then add in carrots & celery, sauté until the vegetables start getting soft.
3. Add tomato paste, stir. Add in beans, broth, & spices. Bring soup to a boil, then reduce to low heat. Cover & simmer for 10-15 minutes.
4. Using hand mixer, blend half the soup in the pot so it becomes creamier.
5. Add in kale or spinach. Cook for several minutes until it wilts.
